Do you ever find yourself avoiding the kitchen on those hot summer days? It is officially that season for me when I dread turning on the oven because the house is already too hot, and the thought of standing over the stove makes me wince.
Summer in the mountains, or high desert to be exact, brings hot days and warm nights. It’s the time of year when 6 o’clock rolls around, and I’d rather be sitting on the porch with a glass of wine and a good book instead of cooking dinner. Over the years, I created a handful of easy-to-throw-together dinners that taste great and allow me to linger on the porch a little longer and still feed everyone.
